Eat More Plants
/“Eat food. Not too much. Mainly plants.”
— Michael Pollan
This is sage advice, regardless of what kind of “diet” or lifestyle we follow. We don’t have to “be” vegan to prepare and enjoy vegan food.
In my house, we eat everything. However, I have been making serious efforts to incorporate more plant-based meals into our weekly menu plan. It’s better for the health of our bodies AND our planet.
Not sure where to start? Try adding some veggies and/or legumes to your usual chili, taco meat, or bolognese.
When I was first introducing my family to veggies on pasta, I started by mixing them in with the meat sauce. Over time, I gradually increased the ratio of vegetables & lentils, and now I can give them full-on vegan sauce without too much protest. #aworkinprogress
