Smashed Chickpea & Avocado Salad is a great plant-based alternative to egg or tuna salad. It can be served on toast, sandwiches, crackers, tacos, salad, loaded sweet potatoes or even nachos!

This recipe gets a wonderful creaminess from avocado (in lieu of mayonnaise), along with loads of flavour from the addition of fresh herbs. This is a delicious, grain-free, paleo & keto version of muesli.

Muesli differs from granola in that it is a mixture of raw cereals (most often oats), dried fruit, seeds and nuts, whereas granola is baked.  Muesli is typically soaked with dairy or nondairy milk, yogurt, or fruit juice before eating to make it easier to chew and digest.
